I wrote about this pesto recipe a while back. It continues to be an easy and fantastic weekday meal - Light enough for after work and before bed, but filling and hearty enough for the first day of snow. (Okay, so they were flurries at-most, but in these parts, it's a slippery slope to the misery of February.)
Served with a simple green salad and some bread-and-oil.
Wine: Helfrich, 2008 Pinot Gris. From the northern part of France, near the border of Germany, it's like a lightweight Gewürztraminer, which works for me; I hate the pungency of that particular region. It has the same acidity and bite, but it's tempered. $13.95 at your local LBCO.
